Decadent Chocolate Cookies {Recipe}

Rich chocolate cookies dipped in white chocolate makes these cookies even more special!  You'll want to share them with friends because they are very hard to resist!

I made these cookies to share on New Year's Eve and they were everything I hoped they would be!  Rich and chocolatey and a perfect send-off for 2013.



Our New Year's Eve wasn't over-the-top, but we did make it fun.  We took Our Boys to see a movie at one of the dine-in theaters.  The Secret Life of Walter Mitty was a fun movie to see and Ben Stiller was funny, as usual.  I typically love his movies... with few exceptions.  It was fun for the boys to have dinner served to them while sitting in movie theater seats.  I can't say the food there was outstanding, but it made them happy.

After the movie, we went over to see some friends and to wait for the ball to drop by watching New Year's Rockin' Eve with Ryan Seacrest.  I must say that after watching the people stand in Time Square to watch the ball drop, I have no desire to go there myself.  It's just too cold for me to stand in one spot for that many hours!  I'll happily watch it from the comfort of my home (or someone else's!).

Since we were going to be hanging with friends until the magic moment when the new year was due to arrive, I wanted to bring a sweet treat to share.  I was home from work so I had time to play around and these cookies were the result!

I started with Martha Stewart's recipe for Milk Chocolate Cookies and as I was pulling out ingredients decided that I realized I had a partial bar of dark chocolate that I could add to the cookies to make them richer.  Hey, if you are going to have a treat on New Year's Eve, you should go all out and have something that will be worth every single calorie!

Once the cookies were baked, My Husband said they needed something more to make them a bit more special.  He suggested a drizzle of white chocolate... well, I tried that, but it wasn't coming out all that pretty.  I decided to dip half of each cookie in the melted white chocolate and the result was perfect!

My Oldest says that these cookies taste like "milk and cookies".  I highly recommend giving them a try and see for yourself!

Decadent Chocolate Cookies

Recipe by Adapted from Martha Stewart's Cookies cookbook
Ingredients
  • 1 cup all purpose flour
  • 1/2 cup Dutch process cocoa
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Kosher salt
  • 3 ounces dark chocolate, coarsely chopped
  • 1 ounce semi-sweet chocolate, coarsely chopped
  • 1/2 cup salted butter
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla bean paste
  • 4 ounces milk chocolate chips
  • 1 package (8 ounces) white chocolate candy melts (optional)
Cooking Directions
  1. Preheat oven to 325 degrees.

  2. Whisk the flour, cocoa, baking soda and salt in a bowl; set aside.

  3. Melt the dark chocolate, semi sweet chocolate and butter in a double boiler that has simmering water in the bottom pan. Allow to cool slightly.

  4. Add the chocolate mixture, sugar, eggs and vanilla bean paste to the bowl of a stand mixer. Mix until combined - about 2-3 minutes.

  5. Gradually add the flour mixture until combined.

  6. Mix in the chocolate chips.

  7. Using a 1 tablespoon cookie scoop, form cookies into balls and place on a parchment lined baking sheet. Allow about 1-2 inches in between each cookie as they will spread a little bit.

  8. Bake until the cookies have cracked and are slightly flattened - about 13-15 minutes Allow to cool completely on wire racks.

  9. Melt the candy melts according to the package instructions. Dip half of each cookie in the melted white chocolate and place back on the parchment paper. Place the cookies in the freezer for 5 minutes to allow the candy melts to set-up.
