Candy Corn Blondies
Do you still have Halloween candy sitting around? I know we have 2 big bags of what the kids brought home from Trick-or-Treating... which is not a truly awful thing, but I like finding ways to use it up so it's not still sitting here in another month.
Yes, I did say that it could still be sitting here in another month... we tend to take a piece or two a night, sometimes not even that often... which means the candy just sits there. Unless you find a creative way to bake with it!
I have made so many chocolatey desserts in recent weeks, that this time I decided a blondie would be the best way to find a new way to enjoy my leftover candy corns!
When I went in search of a recipe to use, I came across one that Chef Michael Symon (of Food Network Iron Chef fame, and more recently The Chew). It's super simple and I bet you have all of the ingredients in your pantry right now.
His recipe used M&M's, but I think just about any leftover candy would fit the bill.
I figured these would end up being "ok"... but, based on the reaction of both of Our Boys, they are a definite "make again"! The recipe makes a small 8x8 pan of bars, which is typically a good thing... unless your kids suggest you take them to share with friends! That's when you definitely don't have enough!
I'll be making this recipe using some of our other "leftover" candies... Milky Way, Twix, Reeses and whatever else is hiding on those bags that I haven't discovered yet!

Candy Corn Blondies
Ingredients
- 1 cup packed light brown sugar
- 1 large egg
- 1 1/2 teaspoons vanilla bean paste (or extract)
- 1 stick butter, melted
- 1/2 teaspoon baking soda
- pinch of salt
- 1/2 cup plus a handful candy corn
- Preheat oven to 325 degrees. Line an 8x8 baking pan with aluminum foil and spray with cooking spray.
- Using a stand mixer, combine brown sugar and egg until light and fluffy. Add the vanilla and butter and mix until combined.
- In another bowl, combine the flour, baking soda and salt. Add the flour mixture to the brown sugar mixture and mix on low until thoroughly combined.
- Add in the 1/2 cup of candy corn and stir until combined.
- Pour the batter into the prepared pan; bake for 25-30 minutes or until a toothpick comes out clean and the top is golden brown.
- Once cooled, cut into squares and serve.
