Mexican Fiesta Dessert {Recipe: Sopapilla Cheesecake Bars}

Happy Mother's Day to all of the fabulous mom's out there - you know who you are and each and every one of you deserve to be celebrated today! 

A few weeks ago, I realized that Cinco de Mayo fell on a Saturday this year... so, with such a perfect day to have a party already on the calendar I started planning.  Only to find out that it was also a really big Communion day and many of our friends had plans already.... so, we postponed the party for a week, which actually worked out so much better due to a warm, sunny day that allowed us to enjoy our Fiesta outside!

When we host a party, we provide the main dishes and some other necessary items.... and at least one dessert.  I leave the rest up to our guests, since I know I love being able to contribute to the party when I am invited I tend to do a semi-potluck party at my house as well.  Besides, it's a fun way to try something new because everyone always brings over something that the rest of us may not have tried before... and this Fiesta was no different, we had quite a feast!  A party with Fiesta music playing while the adults enjoyed a few margaritas and the kids played various games in the yard together... a perfect warm spring evening!

I didn't manage to get any photos of the appetizers, but we started with a fabulous 7-layer Mexican dip, Empanadas and Sausage & Cheese Wontons (these had a bit of kick)... I am going to be requesting recipes for each of these appetizers because I loved each one of them!

For the main meal, we made taco meat and chicken fajitas - seasoned using Penzey's Original Taco Seasoning and their Fajita seasoning.  My Husband decided we needed to add the Flautas he made awhile back - which were a huge hit with the kids (of course!).  Our friends also brought  a Mexican Lasagna (also had a nice kick to it) and a veggie salad filled with all good-for-you things to help offset the rest of the meal.



But, no Fiesta would be complete without fabulous desserts, right?  Our neighbor offered to make her 'Taco' Cake... it is a seriously fun cake - and it was delicious, too!

The taco shell is a large chocolate chip cookie and the inside is chocolate cake.  Food coloring on coconut and other candies help complete the look of real tacos!

I couldn't resist making a dessert as well... and I had been pinning things on Pinterest to keep track of different ideas I had... when I found Sopapilla Cheesecake Bars posted by  Cookies and Cups, I knew I found the perfect dessert!

Incredibly easy and unbelievably, irresistable!  Only a few bars were left at the end of the night and I had shared the recipe with everyone who asked (and that was everyone!) - it was so easy I was able to memorize it.  The recipe was adapted slightly from Pillsbury and the link above will take you to Cookies and Cups recipe for the bars.

The crescent rolls bake up into a flakey pastry and the cream cheese filling is nicely complemented by the cinnamon sugar that is sprinkled on the top layer after melted butter has been poured on top.  Seriously easy... seriously delicious... seriously devoured!

Sounds like a fun and delicious party! I also pinned those sopapilla bars when shelly posted them...so YUM.
I have been eyeing those bars for some time now too - they look so good!
We do parties the same way as you. I like to make a couple of things but then ask everyone else to contribute! So fun!

These are very yummy and easy to make. I decreased the sugar and butter as suggested. I baked them in a Pyrex glass pan and when they were done I covered them with the silicone lid. They stayed covered for about an hour click this and when it was time to eat they were soft and creamy. One of the best desserts I've made in a long time.
