Perfect Lunch for a Hot Day: Lunch Wrap Spirals
This week I sat down and made a very loose meal plan. I went through a couple of my healthier cookbooks for inspiration and selected a few things to make that would get us back to eating the way that we should. We've been indulging a bit more lately between vacations and sharing meals with family and friends.
I pulled out my copy of Weight Watchers: Eat! Move! Play! and found a recipe for something simple but full of my favorite ingredients: avocado, roasted red bell peppers, basil, spinach... full of healthy flavors! I was also inspired by a recent post by Sweetnicks where she made a sandwich that had some of these same ingredients that sounded so amazing.
The Lunch Wrap Spirals are not only filled with good-for-you ingredients, but it's also pretty when you slice them up into bite-size pieces.
I loved the contrasting textures in these bites, and will be packing them into my lunch this week. A nice, no-cook way to prepare a healthy lunch! You could vary the ingredients based on what you like and what might be in your fridge. Only 258 calories and a whopping 7 grams of fiber in each serving!
Lunch Wrap Spirals

Ingredients
2 large (8-inch) flour tortillas
2 tablespoons whipped cream cheese
4 chives or basil leaves, chopped
1/2 small avocado, peeled, pitted and thinly sliced
6 spinach leaves, washed and dried
2 whole roasted red bell peppers, drained and cut into strips
Directions
Spread each tortilla with 1 tablespoon of the cream cheese and sprinkle with the chives (or basil). Layer the avocado slices, spinach leaves, and bell peppers evenly over each tortilla. Roll each up tightly. Cut each roll into 5 or 6 pieces with a serrated knife. Lay the pieces on their sides to see the colorful spiral design.
Serves 2.

I have avocados that I have been wanting to make, I am going to incorporate them into wraps like these! Your picture is so pretty. Such a feel good lunch. (or dinner!)
