Peanut Butter & Jelly Bars from Martha Stewart
This month's theme for Bunko was Back to School, and I immediately knew what I wanted to make - the Peanut Butter and Jelly Bars from Martha Stewart's Cookies Cookbook. I thought the bars would be a fun twist on the PB&J sandwiches that grace many lunchboxes with the return to school.
I don't know why I had put off making these for so long. They were so easy to put together, and I am thinking there are many other variations of this type of bar that can be made as well using other cookie dough flavors.

I combined two different jelly flavors for these bars - strawberry and raspberry. I didn't have enough of just one for the recipe so I thought the combination would be fun to try and it worked out beautifully.

These bars went over very well with the Bunko Babes and with My Oldest... he declared these the best treat ever (but, I do have to admit he says that quite often). My Youngest couldn't be bothered with these since they did not resemble a chocolate chip cookies - he's a purist when it comes to cookies and treats.

These bars would be such a fun treat to have waiting for the kids for an afterschool treat or even as a special surprise for a lunchtime dessert. They are sure to put a smile on their faces.
