Chicken Scallopini from Cooking Light
We had a gorgeous weekend here in New Jersey, which was quite a treat after many weeks of rain! Of course, after indulging at the shore I needed to jump back to a healthy dinner tonight. I pulled out one of the seasonal magazines from Cooking Light - Simple Summer Suppers - that I purchased several years back. I love when they put these issues out because each recipe has photos and they tend to include some of their best recipes.
I love the way lemon and capers come together and create a salty, yet bright flavor. So, when I saw the recipe for Chicken Scallopini not only did I know I'd enjoy it, I was also happy that I had all of the ingredients on hand already. Bonus points for using ingredients already on hand!

Some of the breading stuck to the pan even though I did use the cooking spray as suggested. Now, that was ok because when I made the sauce they helped add flavor. You don't want to skip the sauce because the capers are key to that additional layer of flavor in this dish. If you skip it, the chicken will be ok, but with the light sauce added it really takes it up a notch.
My Boys were not enthralled with the chicken, but My Husband and I enjoyed it. I think perhaps they would have been happier if it was my usual Panko breaded chicken. I do recommend this recipe, not only because it tastes delicious, but it is quick and easy to prepare. You can have it on the table in under 30 minutes. You can find the recipe HERE at Cooking Light.
