Grammy’s Chocolate Cookies from Martha Stewart
Last Friday night, My Husband was off to a poker game. Usually, I’ve got cookies ready to go with him… not this time. I had a busy week and didn’t manage to bake any and the only cookies in my freezer were Jam Thumbprints. Not exactly manly cookies, so he opted not to take them.
I decided after he left that I should begin baking so I could restock the freezer. Little did I know on Friday that by Saturday morning I would need to restock the whole thing! Yes, you read that right, I need to restock my entire freezer. Seems that when it was closed on Friday, the bottom didn’t seal closed – something was blocking it. Saturday morning, My Husband discovered that everything had defrosted and we had to toss it all. There went my soups, chicken stock, chili, and a ton of other food that was in there. We made a trip to Costco to restock on some of our essentials, and I’m now trying to find time to restock the homemade items. It's annoying, but it did require us to clear out things that we had forgotten about... so, there is a bright side to what happened.
Back to the cookies! These cookies are in the soft and chewy section of Martha’s Cookie cookbook. I’ve decided that I’m definitely more fond of the soft and chewy cookie and not so much of the crisp cookie. I’ll be sharing another one this week that everyone else enjoyed, but it wasn’t one of my favorites. These chocolate cookies were delicious! I have already placed the majority of them in the freezer to keep them out of easy reach!

If you like/love chocolate, these cookies are for you! I loved that they stayed soft but still had that bit of crunch from the sugar on the outside of them. These would be nice enough to add to a holiday tray or cookie gift basket. The sugar kind of glistens in the light, so they just seem a bit more special.
My Youngest was not a fan of the sugar coating, but the rest of us enjoyed these cookies quite a lot! I just picked up the lastest Martha Stewart cookbook on Cupcakes and am thinking I may have to make some very soon… if you haven’t seen this cookbook yet, check it out – you won’t be able to resist buying it!
Ingredients
2 cups plus 2 tablespoons all-purpose flour
¾ cup unsweetened Dutch-process cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 ¼ cups unsalted butter, room temperature
2 cups granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
Sanding sugar, for rolling

Directions
Sift together flour, cocoa powder, baking soda and salt into a bowl.

In the bowl of an electric mixer, beat together butter and sugar on medium speed until light and fluffy. Add eggs and vanilla and beat to combine. Reduce speed to low and gradually add flour mixture; beat to combine. Form dough into a flat disk, wrap in plastic wrap and refrigerate for about 1 hour.
Preheat oven to 350 degrees. Shape dough into 1 inch balls, then roll in sanding sugar. Place on baking sheets covered in parchment paper. Bake until set – about 10-12 minutes. Transfer to a rack to cool for 5 minutes, then remove from baking sheet to cool completely on wire rack.
Cookies can be stored in a tightly sealed container for up to 1 week.

I have this cookbook also. Haven't made anything from it in a while though...however, I think these would be one to definitely give a try!
Hmmm. I didn't realize there were "manly cookies". lol That is so funny. Must be the jam made them too "dainty." ;-)
