Marbled Chocolate Banana Bread

I imagine you must think I have an obsession with Banana Bread at this point. I keep trying different versions and I also keep making changes to my recipe as I go along. The thing is, last week, I walked into the cafeteria at work and they had a marbled chocolate and vanilla quick bread as part of the breakfast offerings. It looked really good, a nice combination of dark and light color and dense and moist texture. I figured I could come up with something healthier and make it at home. The bonus being I wouldn't have to waste money, they charge $1.50 per slice, and it would be healthier than what they are serving.

So, the search began. I found a couple of different recipes and opted to make the one from Cooking Light first. I needed to see how the lightened version tasted before I could make changes to a "not so light" version. This one uses plain low-fat yogurt (I used vanilla flavored as I figured I could eat the leftovers without any guilt) and egg substitute. I have no problem with either of these ingredients, however I think they may be the cause of the bread not being as moist as I was hoping for... or maybe my bananas were not as ripe and mushy as they should have been. Not sure, but the bread was tasty and I can now use this as a guide for improving on another recipe I found that needs to be lightened.
This recipe can be found at Cooking Light (HERE). I am thinking of using applesauce as a substitute for the oil in the other recipe I want to make. This seems like a good way of adding some moisture without adding calories. Anyone have additional suggestions?

I love the 2 colours, yeah itoo never buy from coffee shops as they ask so much and i am like i can make them bettr and cheaper at home. And delicous too.

I also was being tempted by one at a local coffee house I host an open mic, and it was very moist, but I was always afraid of what the ingredients were, so this sound like a good idea to make...plus I send snacks with hubby to work for his day, so he does not buy candy bars!
I just used applesauce as an oil substitute and it turned out wonderfully. I think that is the route you should take with this! Looks really good though!

I use applesauce all the time and it works great. You could always start by using half applesauce half oil to see the results. Another option could be yogurt...

mmm, now i'm craving some banana bread!

I love this recipe, I make it regularly around here. If you haven't tried it yet, you should try Cooking Light's coconut and lime banana bread!
The marbling looks really good. I have pureed my bananas in the food processor the last few times I've made banana bread. It seemed to make the bread really moist.

I always here that people put Applesauce in their baked goods to moisten them up..or maybe some fat free sour cream.

I often substitute applesauce in my baked goods. It works splendidly. The look of the bread is so gorgeous with the marbled effect. Sounds delicious!!

applesauce is usually a good sub for me. Sometimes I'll still put a couple of T. of oil in to keep it moist.

Great job, Patsy! The marbling is perfect. Sounds like a nice recipe. I've used applesauce before and it works pretty well. I agree with Lori. A few tbsps of oil does help keep the moisture in.
I don't think you're crazy. I am a huge lover of banana bread. I found a recipe I am so very happy with, took a while though.

Thank you for the suggestions... I'm going to try the applesauce sub. + a bit of oil... I also like the idea of pureeing the bananas. I'm going to try them as I play with this recipe.
