Triple Play Peanut Butter - Oh so good!
Growing up I LOVED Peanut Butter cookies. My mom made them all the time for us, and I remember that distinctive fork mark in the middle of each and every cookie. When I was visiting Joe's blog, Culinary in the Country, I found his recipe for the Triple Play Peanut Butter Cookies. It has 3 big hits of peanuts in it, between the peanut butter, the peanut butter chips and dry-roasted peanuts. When I made them today, they were more like Double Play Peanut Butter Cookies since I chose not to add the peanuts. Not sure why, but I don't like the crunch of nuts in my cookies, love the flavor just not the crunch. I know, I am one those odd people since it seems like many people do like them.
I have to say that these got rave reviews from everyone in my family. Even my Youngest who tends to be a chocolate chip cookie lover enjoyed them. These cookies are nice and crisp around the edges, but soft in the middle. My ideal cookie! I managed to store 3 dozen of them in the freezer for another day, and gave 1 dozen over to the neighbors, too. These make a lot of cookies, so you may want to consider freezing them so they are not all sitting there to tempt you!
